The Le Jour is a champagne Made from 100% Pinot Meunier. The fruit comes from the Premier Cru single vineyard Le Jour in Vrigny. The vines, planted in 1971, grow on clay-silt soils with a limestone subsoil. The base wine from the Cœur de Cuvée was spontaneously fermented and aged for nine months in four-year-old 228- and 400-liter barrels. Malolactic fermentation took place. The wine was not sulfurized, but rather Brut Nature disgorged.
