The taste is harmoniously balanced between spicy and bitter notes, and the scent is intense, reminiscent of fresh green olives. Green Moraloio and Frantoio olives are harvested by hand in November for the emerald green oil. The olive farm is located in Reggello, near Florence. In addition to using its own olives, the oil farm also buys high-quality olives from neighboring olive farmers. Piero Gonnelli pays attention to the top quality of the hand- or machine-harvested olives, the short distances from the harvest to the oil mill, and careful processing in the olive mill.
