This bacon is flavoured with spices from Tuscany, covered with salt and sprinkled with wild herbs. Its tender texture and mild flavour make it a delicacy on unsalted white bread or thinly sliced on crostini.
In order to obtain thin slices, it should be cut from the narrowest part of the piece and, of course, it should be cool.
