Flores de Callejo is the freshest expression of a Tinto Fino. It comes from the La Emilia, La Huelga, Astrales, Jaime, and Sandelaisa vineyards in Sotillo de la Ribera. The vineyards are located between 830 and 850 meters above sea level, and the vines are rooted in calcareous-marly and predominantly clayey soils. After a cool pre-fermentation, the grapes were destemmed, spontaneously fermented, and fermented in a cement cuvée with as little extraction as possible, before being aged for five months.
