The guanciale range in weight from 984g to 1750g . So far, we've solved this by adding or cutting pieces, but that's not as attractive as the butcher's packaging, and it's also quite time-consuming.

Unlike the much more popular pancetta, the meat here comes from the neck.

Whether as strips or cubes, the secret behind many Italian dishes.

Even more flavorful thanks to its higher fat content, guanciale is the core of a true carbonara. Cut into slightly larger cubes, the skin removed, then fried and pan-fried, it's the star of the dish, along with pecorino.

Can also be used for other dishes such as spaghetti all'Amatriciana.

Ingredients: Pork, salt, pepper, natural flavors, spices, sucrose, dextrose, antioxidant E301, preservatives E252, E250. Keep refrigerated. Properties: Sodium nitrite.

Also available as a half version, approx. 0.70 kg, or recently also from the butcher in approx. 0.3 kg, so that the end customer can enjoy it without a vacuum sealer.

This item usually comes shrink-wrapped. However, it's also available unwrapped. Then, with a wait time of about four weeks, it's fresh from the butcher in Italy.
