The Jules Bonnet is a champagne made from 100% Pinot Noir. The fruit comes from four parcels in the Verzenay terroir, classified as Grand Cru , and two parcels from the Chamery terroir, classified as Premier Cru . The average age of this Sélection massale is 55 years. The vines are rooted in gravelly and calcareous sands on a limestone subsoil. The base wine from the Cœur de Cuvée was spontaneously fermented and aged in barriques for nine months. Malolactic fermentation took place. The wine was not filtered and only lightly sulfurized, resulting in a total sulfur content of less than 35 mg/l.
